Dad’s Easy Cheese Mac November 1, 2007

Here is a recipe I can take no credit for, it is my dad’s Easy Cheese Mac. It is very easy and I think fool-proof because I put it in the oven a little runny and it came out perfect.

8oz Elbow Macaroni (I used whole grain)

8oz Sharp Cheddar Cheese, shredded (you will need a little extra cheese to top the dish, about 1/4c to 1/2c.)

3 tbsp butter (I used smart balance)

2 tbsp flour

2 c. milk (I used skim)

Cook the pasta according to directions and set aside.

Preheat the oven to 375 degrees.

In a medium size pot, melt the butter over medium heat. Once the butter is melted add the flour and cook about 2 minutes. Once the flour is dissovled pour in the milk, when milk thickens, take pot of the heat and add the cheese.

Mix the cheese mixture with the cooked pasta.

Pour into a baking dish, top with remaining cheese and heat for 20-30min until bubbly.

This is the easiest recipe (well, of course other than box cheese mac). I made it with a 9mth old and my 2 1/2 year old causing a ruckus in the kitchen. Even my son ate it and he is a picky Cheese Mac eater.
